Beetroot soup with lots of love

Still looking for a soup recipe as a starter for a dinner with your loved ones or friends? Then this beetroot soup might just be the thing for you! It’s easy, it’s cute and it’s both really tasty and something a bit more special than the more known soups like pumpkin or tomato soup. You can even write short personal messages or lovely drawings by using just a tiny bit of cooking cream. I actually had beetroot soup at my family’s new year’s party a couple of years ago but unfortunately we threw out the recipe and we couldn’t remember what was in it. Ever since then, I’ve been trying to find the right combination and quantity of ingredients to make my own beetroot soup and I finally succeeded!

1kg cooked beetroots (and their juices) | |
1.75l warm water +0,25l extra | |
3 beef stock cubes | |
1 large onion | |
320g chopped soup vegetables (make your own mix of carrot, leek, celery) | |
2 cloves of garlic | |
100ml cream (any type, can be soy!) |
Optional
tear and share bread or bread rolls to serve |
Directions

Chop the onion up in pieces and cut the beetroots up in chunks as well.
They don't have to be chopped in really tiny pieces cause you'll be mixing it all in the end, but you don't want them to be too big either cause it might mess up your hand blender.

Put the beef stock cubes in the warm water
Give them a good stir to make sure they dissolve.

Heat up some olive oil in a deep soup pot and add the soup vegetables, crushed garlic and chopped onion.
Cook them for a couple of minutes until they start to soften and then add the beetroots & the water with the beef stock.
Bring it to a boil. Let the soup boil for 5 minutes and then turn down the heat.

Use a hand blender to mix the soup and make sure no chunks of beetroot are left and that the soup is really smooth.
Let it cook for another 5-10 minutes at a medium heat. Add the remaining water if you feel like the soup is a bit too thick.
Put the cooking cream in a squeeze bottle and decorate each bowl of soup the way you want. You can draw hearts, write short messages or even try and draw snowflakes if you're feeling like being creative. Serve the soup with some lovely tear and share bread, to make it an even cozier meal.
