Courgette soup with mini meatballs
There are quite a few things I do not like about Autumn & Winter. But one thing I do love is making soup for my lunch during the week! There is nothing like a warm bowl of homemade soup to keep me going during those colder days. I have a few standard soups that I make throughout those colder months: butternut squash, broccoli, tomato, and beetroot soup. This year I decided to make a new recipe and went for courgette soup with mini meatballs. Although to be fair, I probably add those mini meatballs to any type of soup I make!
Courgette soup is also a great recipe for those who love meal prepping. You could for example just buy a couple of courgettes, stuff them with mince & cheese for dinner, make a quiche for lunch and then make courgette soup for another 2 days of lunches.

|1 large onion|
|2 cloves of garlic|
|50g flat-leaf parsley|
|2 vegetable stock cubes (low salt is possible)|
|100g pork mince|
|100g beef mince|
|1 small egg|
|15g dried breadcrumbs (panko)|
