Courgette soup with mini meatballs

There are quite a few things I do not like about Autumn & Winter. But one thing I do love is making soup for my lunch during the week! There is nothing like a warm bowl of homemade soup to keep me going during those colder days. I have a few standard soups that I make throughout those colder months: butternut squash, broccoli, tomato, and beetroot soup. This year I decided to make a new recipe and went for courgette soup with mini meatballs. Although to be fair, I probably add those mini meatballs to any type of soup I make!

Courgette soup is also a great recipe for those who love meal prepping. You could for example just buy a couple of courgettes, stuff them with mince & cheese for dinner, make a quiche for lunch and then make courgette soup for another 2 days of lunches.

Ingredients:

2 large courgettes
1 large onion
2 cloves of garlic
50g flat-leaf parsley
1.5l water
2 vegetable stock cubes (low salt is possible)
100g pork mince
100g beef mince
1 small egg
15g dried breadcrumbs (panko)

Directions

Chop the onion
As we'll be mixing the soup later on, you don't have to finely chop it, just roughly chopping it will do. Heat up some oil in a deep pot and fry the onion until soft.

Wash the courgette and cut it into cubes
Add the cubes to the pot along with the crushed garlic and let it all cook for 5 minutes.

Pour the water along with the stock cube in the pot.
Add the parsley and let it simmer for 15 minutes.
Blend the soup, season with pepper (salt optional).

Make the meatballs
Mix the mince, egg & breadcrumbs and shape it into small meatballs of no more than 1 cm. Add it to the soup and cook them for 3-5 minutes. They should start to float to the top once they are done.
Serve the soup with some cream & bread and enjoy!
