Next Tuesday, February 13th: Pancake Tuesdaaaay! I must admit that, even though I ate loads of pancakes as a kid, at some point I completely turned against them and I haven’t eaten thin pancakes (or crêpes) since. But just the other week I read that Mental Health Ireland wanted to raise awareness on Pancake Tuesday by inviting people to put a smile on their pancake and then share your happy pancake on social media or by donating directly through paypal/card or by texting MHI to 50300 to donate €4 to Mental Health Ireland. As I think this is a fantastic cause, I decided to break my decade-long avoidance of pancakes and not only did I make my own recipe, I ate about half of them as I finally like them again!
So whether you just like pancakes or you want to help me support a cause that may be often overlooked, I hope you enjoy my recipe for homemade thin pancakes or crêpes. It’s a very basic recipe, there are many other directions you can go with these but it’s always crucial to get the basics first. The technique is very easy but you have to be careful of two things: not to get lumps in your batter and not burn your pancakes. I also only added a small amount of sugar to the pancake batter, as I add a heap of sweet stuff on top. You can of course add more sugar to sweeten it up if you prefer.

250g self-raising flour | |
2 large eggs or 3 small ones | |
500ml milk (can be dairy free) | |
16g vanilla sugar | |
2tsp cinnamon | |
butter to bake the pancakes in |
Directions
Add vanilla sugar, cinnamon, and flour to your mixing bowl and make a hole in the centre.
Add your eggs and half the milk.
Heat up a non-stick frying pan without butter at high heat.
Lower the heat

Bake on both sides for about 1,5 - 2 minutes, be careful when flipping it over, as you don't wanna tear your pancake.
Enjoy with some chocolate, fruit, sugar, whipped cream, ice cream, ..

This is exactly how i make my pancakes. Or at least, until you put the batter away for half an hour. Never done that, but since my daughters asked for pancakes last friday (or better said: screamed, lol) I will keep it in mind.
