Every once in a while I go through my old recipes to look for ones that need improving, mostly photo-wise. Today’s recipe is one that I originally created nearly 3 years ago and I hadn’t actually made it since. So I decided to remake it, modify the ingredients a little bit to balance the flavours out more and to completely reshoot it. It’s turned into a fantastic meal you can have for breakfast, brunch or lunch! It’s a little bowl of sunshine filled with spring/summer flavours: asparagus, fresh mint, basil and chives and some sun-dried tomatoes.

It’s really easy to make and if you’re expecting guests you can make the pea puree beforehand, boil the asparagus beforehand and just pan fry them for a minute when your guests are waiting and you’ll then have their plates ready within 5 minutes (once your eggs are fried you are good to go!)

The Irish and British asparagus season begins in April (you can easily find out when something’s in season on the Bord Bia website) and ends in July. So if you want to buy them local you only have a few months to do so!

Ingredients:

Adjust Servings
5 mint leaves
2 spring onions
5 chives
10 basil leaves
200g Garden peas
8 sun-dried tomatoes, thinly chopped
1/2 lime
250g asparagus
75g lettuce (lamb's lettuce is great)
12 slices of prosciutto
4 eggs
Optional
Small mint leaves for decorating

Directions

1.
Trim off the bottom part of the asparagus
Boil water
Slice the asparagus and add to the water. They need about 6-8 minutes depending on the thickness. Add the peas as well after a few minutes as they only need about 3 minutes.
Mark as complete

Set aside 2 tablespoons of the boiled peas
Take 150 ml of the water that you used to boil them in and add about half of it to a blender along with the remaining peas. Add the herbs, lime juice, 1 spring onion, and season with pepper (salt optional).
Blend, add more water if you prefer it thinner?

Fry the eggs in a bit of oil or butter
Mark as complete

Start plating up while the eggs are cooking
Add some lettuce to a bowl, roll up the prosciutto and sprinkle the sun-dried tomatoes as well as the leftover peas on top.
Slice up the remaining spring onion and divide it over the bowls.
Mark as complete
5.
Give each plate a few dollops of the mousse
Add the egg on top of the bowl and enjoy!
Mark as complete

    The pictures in this article are stunning and the dish looks delicious. I’m not a big fan of peas so I would replace the pea puree for a potato puree.

      Not a fan of peas either in general but I mixed them up with some great herbs to make the puree so you may like it after all? Wouldn’t recommend using potato puree for this, it’ll make the meal too heavy but you could replace it with some pan-fried mushrooms for example, it’s light and it matches well with asparagus and eggs (and prosciutto and sun-dried tomatoes too)
