I love a good challenge! A couple of weeks ago, Heinz Ireland launched a competition together with Lovin.ie looking for the best homemade burger. I usually just get burgers from the butchers and don’t often make them myself. But I really wanted to give it a try so I ended up making an Irish breakfast burger. And gosh, it was EXTRAVAGANT. I could have added more ingredients but to be honest.. it was just gonna be too much. So if you want beans or hash browns it’s probably best to have them on the side.

As part of the terms & conditions, the burger had to be cooked on the barbecue. We did this, along with the bacon and mushrooms, but it’s obviously too much hassle for any normal day. The recipe below was adapted for cooking it in a pan, but you can also use an airfryer or oven.

Ingredients:

450g sausage meat
150g black pudding
8 smoked rashers
4 eggs
2 large tomatoes
rocket leaves
4 chestnut mushrooms
4 burger buns

Directions

1.
Crumble the black pudding up and mix it with the sausage meat
Divide into burgers of 150g each. They will shrink when being cooked so don't make them too small or there'll be nothing left.

Slice the mushrooms into thick slices
Do the same for the tomatoes.
Make sure you have about 3 slices of tomato and about 4 pieces of mushroom per burger.

Heat up a frying pan with a tiny bit of oil
Add the burgers , mushrooms, and bacon and cook for 5 minutes, then flip them over and cook for another 5 minutes.
Try to keep the mushrooms on one side of the pan so they don't get too oily.

Toast the buns
While toasting you can fry the eggs. I would use a separate pan to avoid the oil from the bacon and meat from soaking into the eggs.

Assemble!
Put some lettuce on the bottom, then the tomatoes, burger, bacon, mushrooms, egg and finish with your favourite sauce.

Notes
Tip: The burgers cook very well in an air fryer at 200° for 10 minutes.
