Leftover Roast Flatbread Wraps With Grilled Peppers, Aubergine And Homemade Tzatziki
Sunday roast is without a doubt a very popular dinner in Ireland. People usually use the leftover meat for sandwiches the next day(s) which is a great way to reduce food waste of course. But why not spruce things up and turn them into these delicious leftover roast flatbread wraps with grilled peppers, aubergine and homemade tzatziki? I used leftover roast lamb but you could make this recipe for pork or beef too of course. Even a roast chicken will go well with all these ingredients.
Whenever we have roast meat, I always make sure to save some of the juices as well as the leftover meat. You can then cook the meat in the juices to prevent it from being really dry. It will solidify overnight but as soon as you heat it back up it’ll become liquid again.

5 mint leaves | |
0.5 cucumber | |
2 aubergines | |
2 large red peppers | |
8 flatbreads or pita breads | |
400 g leftover roast meat, sliced in bite-size pieces | |
5-10 tbsp leftover juices |
