Don’t get me wrong, I absolutely love potato fries.. but I could eat sweet potato fries every day! I just love their sweetness and overall flavour. They are really easy to make as well, especially if you have an air fryer. They are done in no time and sweet potatoes are part of my weekly grocery shop anyway so I always have them on hand to either make wedges or fries.

The dip that I made with this is just a little something different from your standard mayo dip as I’m using sour cream as a base. If you want to serve this with some meat I would definitely look at making something spicy, something Mexican perhaps as it’ll go very well with the sour cream too.

Tip: to air fry, follow all the same steps but reduce the cooking time to 15 minutes and make sure to shake the basket regularly.

Ingredients:

Adjust Servings
10-15 sweet potatoes
40cl sour cream
1/2tbsp garlic powder
2tbsp chopped fresh parsley
olive oil
salt & pepper

Directions

Preheat the oven to 200°C fan
Mark as complete

Put a few tablespoons of olive oil in a bowl
Add the fries and coat them well.
Mark as complete

Put them on a tray on parchment paper
Season with pepper & salt (optional)

Bake for 20 minutes

While the fries are baking you can make the dip
Simply stir the chopped parsley and garlic powder into the sour cream and set aside.
Once the fries are done you can sprinkle some fresh parsley on top and serve them with the dip.

Notes
If you suffer from any sort of arthritis or have difficulties chopping things: parboil the peeled potatoes for 7.5-10 minutes, drain and rinse with cold water. Let them cool down before slicing into fries. They will be much softer now which will be easier on the hands.
